Prepping for the Week

Hi everyone!!

The weekend has flew by again and I was home for most of it. Although, we did go to a dear friend's surprise birthday party and of course out for Valentine's.

Speaking of Valentines, I hope you all had a fabulous day or night with your honeys. I did! Terry and  I went to Alfredo's Ristorane Italiano in Clinton Friday night. I do love that place. It wasn't as busy as I thought it was going to be. Their pasta is phenomenal. I think I have tried most of what is on the menu except for the pizzas. Terry and I didn't exchange gifts other than buying each other a card. I rather spend time with my man.

We also attended a surprise birthday party Saturday night. It was for one of my closest girlfriend's husband. That was fun. Seeing the expression on his face. She got him good. It was really nice to see all those people come together for such a special time and celebrate. Their daughter gave a little speech on how special her father is to her and the rest of the family. It was a tear jerker sure. It was just a wonderful time of fellowship, sharing memories and celebrating life. Something we all need more of. I was glad to be a part of it.

While I was preparing supper, dinner; whatever you may call it,lol...I usually prep my breakfast for part of the week. I get up so early in the mornings I really don't want to have to do it then. So on Sunday afternoon/evenings I make overnight oats. I didn't like oatmeal as a kid but these I love, plus they are so easy. You can make any combination of oatmeal you like. This is why I like oatmeal. You can use fresh or frozen fruit, nuts, almonds, protein powder, peanut butter, preserves any thing. Today I made 3 different kinds and I use the same formula for all of them. I purchased the pint mason jars at Target.

Chocolate Chip Oats
1/2 c. oats (steel cut or old fashioned)
1/2 c. Almond Milk (I used unsweetened)
1/4 tsp. of salt
1/2 tsp. cocoa
1 tsp. peanut butter
1/4 c. semi sweet chocolate chips
I crushed a few almonds to sprinkle in the oats.

Raisin and Nut Oats
1/2 c. oats
1/2 c Almond Milk
1/4 tsp. salt
1/4 tsp. cinnamon
1/2 honey
1/2 tsp Protein Powder (your choice)
I crushed a few almonds to sprinkle in oats.

Strawberries and Cream Oats
1/2 c. oats
1/2 c. Almond Milk
1/4 tsp. salt
1/2 tsp. Strawberry Preserves
1/2 tsp. Nut Butter (your choice)
1/4 tsp. Protein Powder (your choice)
Couple of frozen/fresh strawberries (I used frozen)

Stir all ingredients together until well mixed. Place ring and lid on jars, refrigerate overnight. In the mornigs I add just a splash more of Almond milk. The oats will be thick. I heat mine in the microwave (remove metal ring and lid) for anywhere to 45 seconds to a minute. Stir and heat again for another 25-30 seconds. BE CAREFUL THE JARS ARE HOT!!!

I can basically eat this every morning. I don't stray far from this unless it is eggs or yogurt with granola. I'm pretty boring in the mornings. This is something I started during the last corporate fast at church. I reached out to a friend of mine for suggestions;  I needed to get some extra protein in my diet and this worked for me and its healthy. A win win both ways.
